Pros taste systematically — not by gut feeling: 1. Colour: gives clues about the cask (lighter = bourbon/refill, darker = sherry/first-fill), but beware — colour can be added (E150a). 2. Nose (orthonasal): above the nose, mouth slightly open, several short sniffs. The first impression counts. 3. Palate: a small sip, spread it around the mouth — consciously register the texture (oily, creamy, astringent). 4. Retronasal: as you breathe out through the nose, further aromas unfold. 5. Finish: length and development — short/long, warming, drying? Pro trick: always taste comparatively (2–3 glasses side by side). Differences are easier to spot than absolute impressions. And: water and a neutral cracker between drams reset the palate.

Knowing them helps you understand why something tastes the way it does: • Esters (e.g. ethyl hexanoate): fruity — apple, pear, pineapple. Formed mainly during long fermentation. • Aldehydes: grassy, green, sometimes soapy. • Phenols: smoke, peat, medicinal, iodine (see ppm). • Higher alcohols (fusel oils): heavy, oily — in the tails. • Diacetyl: buttery. • Sulphur compounds: cooked vegetables, struck match — usually unwanted (copper binds them away). The distiller's art is to draw the good congeners into the heart cut and keep the heavy/harsh ones (foreshots and feints) out.
Around 60–70% of the aroma comes from the cask. During toasting and charring the wood's building blocks are broken open: • Lignin → vanillin: sweet vanilla. • Hemicellulose → caramelised sugars: caramel, toffee, honey (the toasting level decides). • Oak lactones → coconut, fresh wood (American oak more than European). • Tannins → structure, dryness, tea notes (European oak/sherry more). Important: • First-fill casks give plenty of wood aroma; refill is subtler and lets the distillery character shine through. • American oak (bourbon cask): vanilla, coconut. European oak (sherry): dried fruit, spice, tannin. • STR (shaved-toasted-recharred) revives tired casks.
📝 Exercise: Log a tasting for „GlenDronach 15 (Sherry-geprägt)"→For Scotch, oak is required by law — and for good reason: oak is dense enough to hold the liquid but porous enough for maturation, and it is rich in vanillin and tannins. But not all oak is the same: • American white oak (Quercus alba): tight-grained, plenty of vanillin and lactones → vanilla, coconut, caramel, honey. This is the wood of bourbon barrels — sweet, round, approachable. • European oak (Quercus robur/petraea, often Spanish oak for sherry): coarser-pored, considerably more tannins → dried fruit, raisins, nuts, dark spice, structure and dryness. The wood of sherry and wine casks. • Japanese Mizunara oak (Quercus crispula): very porous and hard to work (high Angel's Share, expensive, leaky) → it needs long maturation but rewards you with an unmistakable profile: sandalwood, incense/joss sticks, coconut, oriental spice. A cult favourite among connoisseurs. Other woods: chestnut, cherry, acacia or amburana (Brazil, cinnamon-spicy) are being trialled in some countries — but for Scotch they are NOT permitted (oak only). Together with the toasting/charring level and first-fill vs. refill, the wood type is one of the biggest levers for the final aroma.
During the second distillation the stillman splits the run precisely — often down to the minute and percentage point: • Foreshots: the first minutes, very high in strength, harsh, rich in methanol — discarded. • Heart/middle cut: the cut point (e.g. dropping from ~72% to ~62% abv) determines the character. An early cut = light/floral, a late cut = oily/heavy. • Feints: fall below the heart-cut limit — they go back into the next charge (recycling). Copper conversation: the longer the vapour stays in contact with copper (tall stills, slow distillation, lots of reflux), the cleaner and lighter the spirit — copper binds sulphur. Short, fast runs give a heavier, meatier new make.
A true connoisseur also recognises when something is off — or when a phenomenon is behind it: • Sulphur: cooked vegetables, burnt match, rubber — often from sulphured sherry casks. Some love it, many do not. • Feints/uncleanliness: sticky-harsh, when the cut ran too far. • OBE (old bottle effect): older bottlings develop their own, often 'dull-metallic-waxy' notes in the bottle over decades — not a fault, but ageing in the glass. • TCA / cork taint: a musty wet-cardboard note from the cork — a genuine fault. • Evaporation/oxidation: nearly empty, long-open bottles lose freshness and go flat. Exercise: deliberately inhale and name the off-notes — that way you sharpen your perception of the good ones.
Tasting blind is the hardest discipline — and the most honest. A system helps: 1. Colour & viscosity: oiliness (legs/tears) suggests higher strength or little chill filtration. 2. Smoke? → Islay/peaty origin. No smoke → Speyside/Highland more likely. 3. Fruit profile: bright fruit (apple/pear) = bourbon cask; dark fruit (raisin/plum) = sherry cask. 4. Grain/oil: spicy-dry → possibly rye; very soft/neutral → grain or a young blend. 5. Estimate the strength: does it burn? A drop of water 'opens' it up — if it reacts strongly, it is cask strength. Calibrate yourself with known references. Always take notes first and guess only afterwards — that way you train real recognition instead of guessing.
The whisky world is full of half-truths. A connoisseur sees through the marketing: • 'Darker = better/older': the colour reveals little. It comes from the cask — but may be adjusted with caramel colouring (E150a). A pale natural-colour whisky can be more intense than a darkly coloured one. • 'Older = better': age is not maturity. Big numbers justify high prices, but balance beats years — a good 10-year-old can outshine a tired 21-year-old. • 'Rare / Limited Edition': scarcity is a sales lever. Some 'limited' releases run to tens of thousands of bottles; 'rare' is not a protected term. Look at the facts (age, cask, cask strength), not the label. • 'More expensive = better': the price reflects hype, rarity and marketing — not necessarily what is happening in the glass. Tasting blind exposes this quickly. • 'Single cask / cask strength is always better': no, just different — more intense and more variable. A carefully married blend can be more harmonious. • 'Whisky matures in the bottle': false. Unlike wine, whisky only matures in the cask. In the bottle it changes at most very slowly through oxidation. Medals and 'finished in …' labels are often sales arguments too. Bottom line: trust your palate, not the label. The nose and tongue don't lie — marketing sometimes does.
Anyone who owns casks should understand the key figures: • OLA (Original Litres of Alcohol): pure alcohol at filling. • RLA (Regauged Litres of Alcohol): current pure alcohol after evaporation — the basis for value and duty. • LPA (Litres of Pure Alcohol): the common pricing unit in cask trading. • Regauging: re-measuring (volume × strength) in the bonded warehouse. Reality instead of hype: • The Angel's Share eats away volume every year — 1–3% depending on the warehouse. • Storage, insurance and later bottling/duty costs erode the return. • The secondary market is thin; 'cask flipping' is risky, and there are fraud cases with overpriced or non-existent casks. ⚠️ NOT investment advice.
